Yes, we did remind the chef not to overcook the lamb. If you see our comments about that, they have explained to us why they use such cooking method (i.e. to squeeze the remaining oil out of the meat).
And yes, the two fish dishes are excellent!!!

For buffet, we recommend you to try Greenery @ TST. We note it has been recently renovated and should be even better now!
Otherwise, you may consider The Lounge @ JW Marriott, which is also a great one in Hong Kong Island.
